Ingredients
Brinjals- 10 preferably small(chopped into neat squares- Soak in salted water atleast 15 min)
salt - to taste
oil - for frying
To pulse
r.chilli-5
bengal gram dhal-1/2 tblsp
shredded coconut- 1 tblsp
asafoetida powder - little
Method
- Dry roast r.chillies and bengal gram dhal together till it changes color.Dry roast shredded coconut separately till golden brown color.Pulse the above ingredients 3 or 4 times.
- Heat about a tblsp of oil and fry the brinjals till it turns dark brown color. Once brinjals turn color completely add required salt and 1 heaped tsp of the powder and mix nicely and switch off immediately.
- Serve with hot rice and ghee/Priya's Mor Keerai

Looks delicious BSDN. Eggplant is a favorite vegetable here at my home, but mostly get those giant eggplants from the local grocery stores. Will try this recipe when I buy the small ones next time.

Brinjal curry looks yummy.I do make this for hot rice and as usual it is rich in taste.I learnt from my mom and whenever brinjal will be fresh and small ,i will prefer to do this.thank sfor sharing.

I never use to have brinjals while in India but after coming to US i have started making it. Also, I was trying some different recipie with Spinach . So, I tried Priya's Mor Keerai and your brinjal curry.. Both the dishes tasted gr8.
